Sweet liquorice filling for macarons

Sweet liquorice FILLING

For my latest black macarons I decided sweet liquorice would be a good choice.


200 g liquorice fudge

0,5 dl double cream (3%)


Put the liquorice fudge in a saucepan and heat it up together with the cream until al the liquorice is melted. Put in the fridge to set. Pipe the filling between two macaron shells.

Liquorice fudge kan be bought in most candystore's but of course you can always make your own;



1 can of condensed milk

1 dl cream 3%

450 grams of muscovado sugar (or brown sugar)

1 tsp liquorice syrup

115 g butter

4 tsp liquorice powder

black food colouring paste


Mix everything except the liquorice powder in pan on medium heat. Keep an eye on it and stir every minute. When it starts to bubble, you need to keep stirring more often for the next 10 minutes. The mixture needs to feel quite thick before you remove it from the stove.

Then transfer the mixture into a bowl or a mixer. Mix or use an electric whisker for 10 minutes. Grind the liquorice powder in a mortar. Add the liquorice powder into the mixture and beat for a couple of minutes.

Pour into a tray covered with a baking sheet. Let it set in the fridge and cut with a knife in pieces.
